I refused to start buying strawberries too soon, but as soon as February approaches I can no longer resist. As it happens, despite being cliché, they are very helpful for Valentine's Day, as we have shown here in many recipes. I still insist on chocolate desserts and this time I suggest a Tonka bean chocolate pannacotta with quick strawberry sauce. This time it is not necessary to turn on the oven to pamper yourself with a sweet romantic treat.
I already commented on this other recipe that I could not appreciate this Italian dessert until I started doing it at home, and I also like that they are not too sweet. The grace of a good pannacotta is to use just jelly, that curds at its point but still creamy, and do not bundle. Tonka bean gives a different and special aromatic touch, but it can be omitted without problems or replaced with cardamom or more vanilla.

- 100 ml milk
- Sugar 25 g

- Jelly in sheets 6 g

- Large and juicy strawberries 5 g

Fill a bowl or bowl with cold water, dip the jelly leaves and let them hydrate. Arrange the cream with the milk in a saucepan, add the sugar, salt, tonka bean and vanilla bean open longitudinally. Heat, bring to a boil, remove from the fire and let infuse about 10 minutes.
Chop the chocolate and melt it in the water bath, or in the microwave if you control it well, carefully That does not burn. Remove the spices from the cream mixture and pour the chocolate, stirring well with some rods.
Drain the gelatin leaves hydrated, gently, and throw them in the saucepan. Stir carefully to dissolve them until you have a homogeneous liquid mass. Distribute in 4-5 clean molds. Take to the fridge until it sets, at least two hours, better a little more.
For the strawberry sauce, wash the strawberries and remove the peduncles. Cut into small pieces and arrange in a microwave-safe container, better if it has a lid. Add the rest of the ingredients, stir and heat at medium temperature for a few minutes, gradually checking the consistency. I like that there are whole pieces of fruit left. Adjust the sweet spot if necessary.
Unmold the panna cotta carefully, inserting a knife around the edges of the mold or dipping it in warm water for a few seconds. The silicone ones usually go very well, and we can choose a beautiful way for Valentine. Serve with the strawberry sauce.
What to accompany pannacotta with
Try to wait long enough for the Tonna bean chocolate panna cotta set well and so that the strawberry sauce is cold. We can add some raspberries to the mixture, or add some hot melted chocolate to play with the temperature. And enjoy it in good company!
